1/2 cup (120 ml) canola oil, or vegetable oil
1/2 cup (113 g) unsalted butter, room temperature
1 1/2 cups (300 g) granulated sugar
4 large eggs, room temperature
1 tablespoon vanilla bean paste
3 cups (360 g) cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup (240 g) buttermilk, room temperature
- Frosting
1 cup (200 g) granulated sugar
4 large egg whites
1/4 teaspoon salt
2 cups (454 g) unsalted butter, cut into pieces at room temperature
1 tablespoon vanilla bean paste or vanilla extract
Directions
- In a bowl, add butter;
- Add oil;
- Add sugar;
- Beat in a mixer;
- Add eggs (mix one at a time);
- Add vanilla paste;
- Mix;
- In a bowl, add cake flour;
- Add baking powder;
- Add salt;
- Stir;
- Add a half of the dry mix to the mixer with the wet mix;
- Mix;
- Add buttermilk;
- Mix;
- Add the other half of the dry mix;
- Mix;
- Transfer the dough to 2 greased and floured pans;
- Bake for 20-25 minutes;
- Cover with swiss meringue buttercream;
- Cover with the other dough;
- Cover with swiss meringue buttercream also on the sides;
- Decorate;
