minutesToday i’m making an italian classic which is mushroom risotto in just a few simple steps
with just a few simple ingredients. You’ll get this creamy and delicious risotto
Ingredients
300g rice (arborio, carnaroli or vialone nano) – 1 cup + 1/2 cup
400g mushrooms – 14.10 oz
1.5 l water (6 cups + 1/4 cup)
1 small onion
40g butter (3 tbsps)
30g parmesan cheese (3 tbsps)
80ml white wine or broth (1/3 cup)

Directions
- Clean and peel the mushrooms;
- Slice the mushrooms;
- In a pan, add olive oil;
- Add chopped onion;
- Add the mushrooms;
- Add a half teaspoon of salt;
- Cook for 5 minutes;
- Once they’re done i set them aside;
- In the same pan i toast the rice on medium heat for a couple of minutes;
- Meanwhile i also prepare a simple broth with a liter and a half of water and i add in a couple pieces of mixed vegetables;
- Add about a teaspoon and a half of salt;
- Once the rice is toasted i pour in the white wine;
- Let it evaporate and then i start adding one or two ladles of broth;
- Let them evaporate and then i add some more;
- I take a little bit of the mushrooms that i prepare earlier and i blend them up with a hand mixer and a little bit of broth to get a nice cream;
- Add to risotto;
- The risotto will take about 25 minutes to cook and in the last 5 minutes of its cooking time i add in the mushrooms lastly;
- Add some butter and parmesan cheese;
- Add a little bit of parsley on top;
- Your Mushroom Risotto is ready!
