Carbonara or spaghetti alla carbonara is a traditional Italian pasta recipe. Its name is derived from the Italian word carbone, which means coal. It is believed to have been a recipe appreciated by charcoal preparers from the Apennine Mountains in the Umbria region of Italy. Other theories point out, on the other hand, that the name is due only to the dark color of the freshly ground black pepper used in its preparation.
