Ingredients
- Crust
7 oz (200g) digestive biscuits or graham crackers
2 tbsp (30g) sugar
5 tbsp (70g) butter, melted
- Filling
4 egg yolks
1 can (14 oz -397g) sweetened condensed milk
1/2 cup (120ml) lime juice
1 tbsp lime zest
- Topping
1 cup (240g) whipping cream
1 tbsp (10g) powdered sugar
Directions
- Crust
- In a mixer, add 7 oz (200g) digestive biscuits or graham crackers;
- Process until crumbs form;
- Transfer to a bowl;
- Add 2 tbsp (30g)sugar;
- Add 5 tbsp (70g) butter, melted;
- Stir;
- Transfer to a 8-9 inch (20-23 cm) pie pan;
- Press at the bottom and edges;
- Bake at 350F (180C) for 8-10 minutes;
- Let it cool;
- Filling
- In a bowl, add 4 egg yolks;
- Add 1 tbsp lime zest;
- Whisk until creamy and light yellow colored;
- Add 1 can (14 oz -397g) sweetened condensed milk;
- Whisk;
- Add ½ cup (120ml) lime juice;
- Whisk;
- Fill the pie;
- Bake at 350F (180C) for 15 minutes;
- Cool completely at room temperature and refrigerate for a couple of hours or overnight;
- Topping
- In a mixer, add 1 cup (240g) whipping cream, chilled;
- Whip until soft peaks form;
- Add 1 tbsp (10g) powdered sugar;
- Whip until stiff peaks form;
- Cover the pie;
- Add Lime zest;
