Ingredients
- Caramel
1 and 1/2 cup sugar (270g)
Water 1 cup (240 mL)
Banana 6 to 8 units
- Vanilla cream
Gem 3 units (large)
Condensed milk 1 can (390g)
Milk 1 cup (240 mL)
Sour cream 1 box (200g)
Vanilla essence 1 teaspoon (5 mL)

Egg whites 3 units
3/4 cup sugar (135g)
Vanilla essence 1/2 teaspoon (1 mL)
Directions
- Caramel
- In a pan on the fire, add 1 and 1/2 cup Sugar (270g);
- Let it start to melt and mix;
- Add Water 1 cup (240 mL);
- Mix well and let it boil until you get the yarn point;
- Let cool;
- Add banana slices in a refractory;
- Add the caramel syrup on top;
- Vanilla cream
- In a pan, add 3 units Yolk (sifted);
- Add Milk 1 cup (240 mL);
- Mix well;
- Add condensed milk 1 can (390g);
- Add milk cream 1 box (200g);
- Mix;
- Bring to a medium heat and when it starts to boil, cook for another 7 minutes, or until it starts to thicken (always stirring);
- Turn off the heat and add 1 tsp (5 mL) vanilla essence;
- Mix;
- Add the cream to the platter;
- Add a plastic bag in contact with the cream;
- Put it in the fridge;
- Cover
- In a pan on the fire, add 3 units of egg whites;
- Add 3/4 cup (135g) Sugar;
- Mix well until the sugar dissolves completely;
- Transfer to a stand mixer, beat for at least 5 minutes;
- Add 1/2 teaspoon vanilla essence (1 mL);
- Beat some more;
- Add over the platter;
- Make spikes with a spoon;
- Use a blowtorch or take it to the grill to brown a little;
- Your balanced chico is ready!
