This chicken bobó will drive everyone crazy to try the recipe!

Ingredients

  • 1 kg chicken breast, cut into cubes

  • 1 kg of cassava (or potato/baroa potato)

  • 400 ml of coconut milk

  • 1 chopped bell pepper

  • 1 chopped tomato

  • 1 chopped onion

  • 3 minced garlic cloves

  • Olive oil to taste

  • Palm oil to taste

  • Green smell to taste

  • Oregano to taste

  • Salt to taste

Directions

  • Season the chicken cut into cubes with the seasoning of your choice, mix well and set aside. 
    In a pan put some olive oil and palm oil, the chopped onion and the crushed garlic. 
    Sauté lightly stirring well and add the chicken.
  • Cook well for a few minutes, stirring constantly, until the chicken is well cooked. 
    Add the chopped pepper and tomato, oregano to taste, salt to taste and sauté a little longer, always stirring well.
  • Chop the cassava (or potato), place in a pressure cooker with water until covered and a little salt. 
    Cover the pan and cook for about 30 minutes after getting pressure. 
    Then put the cooked cassava in the blender, add the coconut milk and beat for a few minutes.
  • Transfer the beaten cassava to the pan with the chicken and vegetables, cook for a few more minutes, stirring well, finish by putting chopped green smell on top and the chicken bobó is ready.
