minutesTo make your Udon Noodles, use the ingredients from the list below and follow the instructions in the preparation method.
Ingredients
2 packages udon (I like frozen sanuki udon) (Note 1)
½ large onion
2-3 cabbage leaves
1 carrot
2 shiitake mushrooms
2 scallions/green onions
½ lb. (227 g) sliced pork belly, or your choice of meat, seafood and vegetables
1 Tbsp. oil
- Seasonings
Freshly ground black pepper
3 Tbsp. Mentsuyu (Noodle Soup Base) (Note 2)
1 tsp. soy sauce
- Toppings
1 pkg (about 3 Tbsp) Katsuobushi (dried bonito flakes)
1 Tbsp. picked red ginger (Kizami Shoga) (optional)
Directions
- Slice 1/2 large onion;
- Remove cabbage core;
- Cut 3 cabbage leaves into 1” (2.5 cm) square pieces;
- Peel one carrot;
- Cut the carrot into 2” (5 cm);
- Julienne the carrot (cut into 2” (5 cm) matchsticks);
- Remove stems from 2 shiitake;
- Slice the shiitake;
- Thinly slice the top 2” (5 cm) green part of scallions and set aside (for garnish);
- Cut the rest of scallion into 2” (5 cm) pieces;
- Slice 1/2 lb pork belly into 1″ pieces;
- Boil 2 udon noodles;
- Drain udon noodles;
- Rinse with cold water;
- In a frying pan, heat 1 Tbsp oil over medium high heat;
- Stir fry pork;
- Add onion;
- Cook onion until soft;
- Add carrots and cabbage;
- Add scallion and shiitake;
- Add fresh ground pepper;
- Stir fry until vegetables are lightly wilted;
- Add udon noodles;
- Add 3 Tbsp mentsuyu;
- 1 tsp soy soy sauce;
- Mix well;
- Serve on a plate and sprinkle bonito flakes and green onions on top;
