In How to Grow the Peanut and 105 Ways of Preparing it for Human Consumption, he included three recipes for peanut cookies with crushed or chopped peanut as an ingredient.   • ¼ cup (51 g) vegetable shortening, room temperature

  • 1 cup (210 g) light brown sugar, packed

  • 1 large egg, room temperature

  • ½ cup (129 g) creamy peanut butter

  • 2 teaspoons vanilla extract

  • 1 ½ cups (195 g) all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt


  • In a glass jar, add ¼ cup (56 g) unsalted butter, room temperature;
  • Add ¼ cup (51 g) vegetable shortening, room temperature;
  • Add 1 cup (210 g) light brown sugar, packed;
  • Beat with the mixer;mixer

  • Add ½ cup (129 g) creamy peanut butter;
  • Add 2 teaspoons vanilla extract;
