Ingredients

  • 2 lbs. baby potatoes

  • 3 tbsp. olive oil

  • 2 cloves garlic, minced

  • 2 tbsp. butter

  • Salt and pepper, to taste

  • Chopped fresh herbs (such as parsley or chives), for garnish (optional)

Directions

  • Preheat your oven to 425°F (220°C).
  • Wash the baby potatoes and place them in a pot of salted water. Bring the water to a boil and cook the potatoes for 10-15 minutes, or until they are tender but not falling apart.
  • Drain the potatoes and place them on a baking sheet lined with parchment paper.
  • Use a potato masher or a fork to gently press down on each potato, smashing them slightly.
  • Drizzle the olive oil and minced garlic over the smashed potatoes, then season with salt and pepper.
  • Roast the potatoes in the oven for 20-25 minutes, or until they are golden brown and crispy.
  • Remove the potatoes from the oven and add the butter to the pan, tossing the potatoes until they are coated in the melted butter.
  • Serve the smashed potatoes hot, garnished with chopped herbs if desired.
