Ingredients

  • 1 cup semolina

  • 1 cup sugar

  • 1/2 cup ghee or clarified butter

  • 2 cups water

  • 1 tsp cardamom powder

  • 1/4 cup chopped almonds or other nuts (optional)

Directions

  • Heat a heavy-bottomed pan over medium heat and add the ghee or clarified butter. Once the ghee has melted, add the semolina and roast for 5-7 minutes, stirring constantly, until it turns golden brown and aromatic.
  • In a separate pan, bring the water and sugar to a boil, stirring constantly until the sugar dissolves.
  • Add the boiling water and sugar mixture to the semolina slowly, stirring continuously to avoid lumps.
  • Add the cardamom powder and chopped nuts, if using, and continue to stir for a few more minutes until the mixture thickens and comes together as a mass.
  • Remove the pan from the heat and transfer the halva to a greased mold or tray. Press down firmly to even out the surface and allow it to cool and set for at least an hour.
  • Once the halva has set, cut it into desired shapes and serve.
