1 cabbage
Water to boil the cabbage (reserve this cabbage cooking water to use in the recipe)
1 cup (tea) of white rice or 180 grams
1 cup (tea) of ground beef or 220 grams
1 large onion, grated or 100 grams
2 medium tomatoes, chopped or 190 grams
5 cloves of grated garlic or 10 grams or 1 tablespoon (soup)
¼ cup of chopped parsley (chopped)
1 and ½ tablespoons chives or 15 grams
1 and ½ teaspoon of salt
¼ teaspoon of black pepper or 0.5 gram
¼ teaspoon of Syrian pepper or 0.5 gram
2 tablespoons of olive oil
1 beef stock cube or 10 grams (optional) (You can use homemade beef stock)
¼ cup of very hot water
700 ml cabbage cooking water
- Sauce
4 ripe tomatoes, roughly chopped or 380 grams
2 tablespoons of oil
1 lemon juice
2 cloves of crushed garlic
½ teaspoon of salt
1/16 teaspoon pepper or 1 generous pinch
¼ teaspoon of sugar
¼ cup of tomato paste
½ tablespoon minced or minced garlic
1 cup cabbage cooking water
Directions
- Remove the cabbage core;
- Cook in a pan with boiling water for 10 to 15 minutes (turn it over and let the leaves soften a little);
- Drop the leaves;
- In a bowl, add 1 cup (tea) of white rice or 180 grams;
- Add 1 cup (tea) of ground beef or 220 grams;
- Add 1 large grated onion or 100 grams;
- Add 2 medium chopped tomatoes or 190 grams;
- Add 5 cloves of grated garlic or 10 grams or 1 tablespoon;
- Add ¼ cup (tea) of chopped parsley;
- Add 1 and ½ tablespoons of chives or 15 grams;
- Add 1 and ½ teaspoons of salt;
- Add ¼ teaspoon of black pepper or 0.5 gram;
- Add ¼ teaspoon of Syrian pepper or 0.5 gram;
- Add 2 tablespoons of olive oil;
- Mix well;
- Stuff the cabbage leaves;
- Fold them;
- Transfer to a refractory;
- Place the leftover cabbage leaves in the bottom of a pan;
- Add the cigars on top;
- In a bowl, add 1 beef broth tablet or 10 grams (optional) (You can use homemade beef broth);
- Add 1/4 cup of hot water and mix;
- Add to the pan;
- Add water until the cigars are covered;
- Cover the pan;
- Let it cook for 1 hour on low heat;
- In a blender, add 4 roughly chopped ripe tomatoes or 380 grams;
- Add 2 tablespoons of olive oil;
- Add juice of 1 lemon;
- Add ½ teaspoon of salt;
- Add 1/16 teaspoon of pepper or 1 generous pinch;
- Add ¼ teaspoon of sugar;
- Add ¼ cup (tea) of tomato paste;
- Add ½ tablespoon of crushed or minced garlic;
- Add cabbage cooking water;
- Beat for 1 minute;
- Add the sauce to the cigar pan;
- Let it boil for 10 minutes;
- Your cabbage cigar is ready!
