The name “royal” comes from its use in royal weddings and other special occasions. Royal icing can also be colored with food coloring to create a variety of shades and hues. It is often piped onto cookies or cakes using a pastry bag to create detailed designs such as flowers, borders, and lettering.

Ingredients

  • 3 egg whites

  • 1 pound (454 g) of powdered sugar (confectioner’s sugar)

  • 1/2 tsp cream of tartar

  • Food coloring (optional)

Directions

  • In a large mixing bowl, beat the egg whites with an electric mixer on high speed until they become frothy.
  • Add in the cream of tartar and continue to beat until soft peaks form.
  • Gradually add the powdered sugar, about 1/2 cup at a time, while continuing to beat on medium speed.
  • Beat until the mixture becomes thick and glossy, and forms stiff peaks. This should take about 5-7 minutes.
  • If you want to add food coloring, divide the icing into separate bowls and add a few drops of food coloring to each bowl. Mix well until you achieve the desired color.
  • Once the icing is ready, transfer it to a pastry bag or a plastic bag with the tip snipped off.
  • Use the icing to decorate cookies, cakes, or other baked goods as desired.
