Ingredients

  • 1 cup of couscous

  • 2 vegetable stocks dissolved in 400 ml of boiled water

  • 2 tablespoons of olive oil

  • 1 chopped bell pepper

  • 1 can of green corn

  • 1 small red onion chopped

  • 2 chopped tomatoes

  • 2 cups of cooked black beans without broth

  • Chopped chives

  • Salt and pepper to taste

Directions

  • In a bowl, add 1 cup of couscous;
  • Add 2 vegetable broths dissolved in 400 ml of boiled water;
  • Add 2 tablespoons of olive oil;
  • Add salt and pepper to taste;
  • Mix well;
  • Let it rest for 5 minutes;
  • Add 1 chopped bell pepper;
  • Add 1 can of green corn;
  • Add 1 small red onion, chopped;
  • Mix;
