Ingredients
1 cup of couscous
2 vegetable stocks dissolved in 400 ml of boiled water
2 tablespoons of olive oil
1 chopped bell pepper
1 can of green corn
1 small red onion chopped
2 chopped tomatoes
2 cups of cooked black beans without broth
Chopped chives
Salt and pepper to taste
Directions
- In a bowl, add 1 cup of couscous;
- Add 2 vegetable broths dissolved in 400 ml of boiled water;
- Add 2 tablespoons of olive oil;
- Add salt and pepper to taste;
- Mix well;
- Let it rest for 5 minutes;
- Add 1 chopped bell pepper;
- Add 1 can of green corn;
- Add 1 small red onion, chopped;
- Mix;
