On a night where culinary magic merged with camaraderie between chefs, the Madereros restaurant gave us a unique gastronomic experience. Under the direction of the talented Chef Mario Espinosa, the pairing dinner included the collaboration of Chef Alan Peña, from the Casa Cenizo restaurant.

In this culinary epic, each chef was like a member of King Arthur’s Round Table, contributing their own skill and experience for the benefit of diners. Just as the knights of legend trusted in the strength of their union to face challenges, the chefs trusted in the harmony between their culinary creations and the Punto Norte wines to pair each dish.


The evening began with an intriguing snack that represented the best of both worlds: the chicken croquette and creamy sauce from Madereros paired with a Chardonnay from Punto Norte, along with the sweetbread fritter from Casa Cenizo, accompanied by an exquisite blend.


For the starter, the beet hummus with pistachio and pita bread from Madereros fused perfectly with a rosé wine, while the fishing ceviche with fermented piquín from Casa Cenizo delighted the palates with its freshness, accompanied by a Chardonnay that enhanced its flavor .


The highlight came with the main courses, where the New York aged with black recado demi and shiitake from Madereros was masterfully paired with a Cabernet Sauvignon, while the tail sandwich with mole parrense from Casa Cenizo was fused with a Merlot.


Finally, dessert offered a sweet closing to the night, with a delicious chocolate and coffee from Madereros paired with a Malbec that closed the experience with a flourish.

Chef Mario Espinosa’s next collaboration at Madereros will be on April 26 with chefs Juan Cabrera and Alejandro Villagómez.
