The Central restaurant, in Lima, Peru, headed by chef Virgilio Martínez Di Santo, was named the best restaurant in the world by “The World’s 50 Best” 2023.
According to its website, Central’s kitchen “focuses on constant movement, on observing and respecting the temporality and seasonality that the land dictates to us.”
For their part, the organizers ofThe World’s 50 Best” indicate that “the concept of Central was developed over the years, forming a menu that takes diners through 15 different Peruvian ecosystems, classified by altitude, from 15 meters below the Pacific Ocean to 4,200 meters in the Andes”
As a tribute to Peruvian gastronomy, one of the richest, most diverse and most recognized on the planet, Central offers tasting menus with dishes that highlight ingredients from all over the country as a journey through food.
