Eggplant Stuffed with Minced Meat

minutesFor your ground beef stuffed eggplant to be perfect, you will need the ingredients listed below.
Ingredients
2 eggplants
1/2 chopped onion
1 chopped tomato
2 tablespoons chives
200g ground beef (ground duck)
100g of mozzarella
Salt, pepper and paprika to taste
Directions
- Remove the eggplant pulp and scrape out the seeds;
- Chop the hoopoe;
- Add water and salt in a bowl, and add the hoopoe;
- Store in the fridge;
- In a pan, add water and 1 tablespoon of salt;
- Cook the eggplants for 10 minutes;
- In a pan, add 1 tsp of oil;
- Add half a chopped onion;
- Saute for 1 minute;
- Add 3 crushed garlic cloves;
- Mix;
- Add 200g of ground beef;
- Add oregano to taste;
- Add black pepper to taste;
- Add salt to taste;
- Add paprika to taste;
- Mix;
- Add 1 chopped tomato;
- Add 2 tablespoons of chives;
- Add the eggplant pulp (without the water);
- Cook a little;
- Drizzle the eggplant skins with a drizzle of olive oil;
- Stuff the eggplants;
- Add grated mozzarella;
- Add oregano;
- Bake in a preheated oven at 180 degrees until the cheese is golden.
