Ingredients
2 eggplants
1 small onion
1 tomato
50 grams of grated Parmesan cheese
Basil to taste
Olive oil to taste
Salt to taste
Directions
- Cut the eggplants into slices approximately 1 cm thick.
Put 1 liter of water in a pan, put it on the fire and as soon as it boils add a little salt and vinegar.
Blanch the eggplants to remove the bitter taste and wash them afterwards. - Place the eggplant slices side by side on an oiled baking sheet.
Add salt to taste on top, then drizzle the slices with olive oil. - Chop the tomato, onion, basil leaves and place on top of the eggplant slices.
Sprinkle grated Parmesan cheese to taste over the eggplants. - Preheat the oven to 280º₢ and bake the eggplants for approximately 15 minutes, or until the cheese is melted.
Carefully remove from the oven and the recipe is ready to eat.
