Ingredients
1 tablespoon of vinegar
500g of chickpeas
3 bay leaves
1 small onion chopped
1 cup of ice water
1 tablespoon of sugar
1 carrot, diced, cooked al dente
1 can of duet (corn and pea)
1 small green pepper chopped
2 medium tomatoes, chopped
½ cup of sliced olives
Chopped Mozzarella Cheese (100g)
Green smell to taste
Salt to taste
½ teaspoon of black pepper (to taste)
⅓ cup of olive oil (to taste)
Directions
- In a bowl full of water, add 500g of chickpeas;
- Add 1 tablespoon of vinegar;
- Mix;
- Place in the fridge for 3 hours;
- Replace the water with vinegar for clean water and leave it in the fridge for another 10 hours;
- In a pan, add the chickpeas;
- Add water to cover;
- Leave it on the fire until it boils a little;
- Discard the water;
- In a pressure cooker, add the chickpeas;
- Add water to cover;
- Add 1 teaspoon of salt;
- Add 3 bay leaves;
- Cover and leave for 2 minutes under pressure;
- In a bowl, add 1 small chopped onion;
- Add 1 tablespoon of sugar to a cup of ice water and mix;
- Add the sugar water to the onion bowl;
- Book for 20 minutes;
- Add half of the chickpeas in a refractory;
- Add 1 carrot cut into cubes;
- Add 2 diced tomatoes;
- Add diced bell pepper;
- Add ½ cup of sliced olives;
- Add 1 can of duet (corn and pea);
- Mix;
- Add the onion (without the water);
- Add the rest of the chickpeas;
- Mix;
- Add 100g of diced mozzarella cheese;
- Add green smell;
- Add 1/3 cup of olive oil;
- Add half a teaspoon of black pepper;
- Mix well;
- Your Chickpea Salad is ready!
