Chicken marsala is an Italian dish made with chicken fillets, mushrooms, and marsala wine. The chicken is coated in flour, briefly sautéed, and removed from the pan, which is then used to make a reduction of the marsala. The reduction gives the wine a syrup-like consistency, and the sauce is made by adding onions or chives, plus mushrooms, herbs, and possibly other ingredients. The sauce is poured over the chicken, which has been kept warm, and served immediately.

Chicken Marsala

Ingredients
1 pound (450g) skinless boneless chicken breast halves, pounded 1/4 inch (6mm) thick
1/3 cup (40g) flour
Salt and freshly ground black pepper
1 shallot, diced
2 garlic cloves, minced
3 tbsp olive oil
9 oz (250g) Cremini Mushrooms, sliced
1/2 cup (120ml) Marsala wine
1/2 cup (120ml) chicken stock
3 tbsp (45g) whipping cream
1 tbsp (14g) Butter
Directions
- Cut 9 oz (250g) Cremini Mushrooms in thick slices;
- Cut in 1/4 inch (6 mm) halves of 1 pound (450g) skinless boneless chicken breast;
- Add Salt and freshly ground black pepper;
- Dredge each piece of chicken in 1/3 cup (40g) flour;
- Add 2 tbsp olive oil in a pan;
- Cook for about 4 minutes on each side or until browned;
- Transfer to a plate;
- Add 1 tbsp olive oil in a pan;
- Add 1 shallot, diced;
- Add 2 garlic cloves, minced;
- Cook for 2 minutes;
- Add Sliced mushrooms;
- Saute the mushrooms for 5-7 minutes until browned;
- Add ½ cup (120ml) Marsala wine;
- Simmer for 2 minutes;
- Add 1/2 cup (120ml) chicken stock;
- Simmer 2 minutes more;
- Add 3 tbsp (45g) whipping cream;
- Add 1 tbsp (14g) Butter;
- Return chicken to pan;
- Cook for 2-3 minutes
- Add Parsley;
- Your Chicken Marsala is ready!
