There are many varieties of biryani, and each type has its own unique characteristics. From Kashmir to Kanyakumari, from the east to the west of India, there are different varieties of this dish, which usually have their roots in the ingredients and the uses of the cooks of the area. It can be considered in all cases as a saucepan dish, with the ingredients cooked together in the last stage of preparation. There are pre-made spice mixtures in India that are sold commercially in supermarkets or shops, thus trying to reduce cooking times, but the flavor differs considerably from traditional preparation.

Ingredients
Chicken – 750 gms
Basmathi Rice – 2 cups
Chilli Powder – 2 tbsp
Turmeric – 1 tsp
Ginger Garlic Paste – 2 tbsp
Garam Masala – 1 tbsp
Mint Leaves – 1 cup
Coriander Leaves – 1 cup
Yogurd/Curd – 1 cup
Fried Onions – 1 cup
Lemon Juice – 2 tbsp
Saffron – few strands
Cinnamon – 3 small sticks
Cardamom – 9 – 10 numbers
Cloves – 8 -9 numbers
Bay Leaves – 1 – 2 numbers
Peppercorns – ½ tsp
Star Anise – 2- 3 numbers
Oil – 3 tbsp
Salt, to taste
Directions
- In a bowl, add Chicken – 750 gms (cut into cubes);
- Add Chilli Powder – 2 tbsp;
- Add Turmeric – 1 tsp;
- Add Garam Masala – 1 tbsp;
- Add Salt;
- Add Ginger Garlic Paste – 2 tbsp;
- Add Lemon Juice – 2 tbsp;
- Add Coriander Leaves – 1 cup (save some for later);
- Add Mint Leaves – 1 cup;
- Add Yogurd/Curd – 1 cup;
- Add Fried Onions – 1 cup (save some for later);
- Mix well;
- Marinate for 45 Mins or preferably overnight;
- Boil 3 cups of water in a pan;
- Add 1 tbsp salt;
- Add Spices;
- Allow it to boil;
- Add washed and soaked rice;
- Cook rice for 70%;
- Drain the rice;
- Discard the spices;
- Keep rice aside;
- In a pan, add oil;
- Add marinated chicken;
- Mix well;
- Cover and cook for 5 to 7 mins;
- Add Cooked Rice ( on top of the half cooked chicken);
- Spread Evenly;
- Add reserved fried onions;
- Add remaining coriander leaves;
- Add Soaked Saffron to the “CHICKEN DUM BIRIYANI”;
- Cover the pan with foil;
- Cook for 25 to 30 mins ( on low flame);
- Your Chicken Dum Biryani is ready!
