Ingredients

  • 3 cups cooked rice, preferably day-old and chilled

  • 2 chicken breasts, sliced into small pieces

  • 2 eggs, lightly beaten

  • 1/2 cup frozen peas and carrots

  • 1/2 onion, chopped

  • 3 cloves garlic, minced

  • 2 tablespoons vegetable oil

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • Salt and pepper, to taste

Directions

  • In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add the onion and garlic and cook until fragrant, about 2 minutes.
  • Add the frozen peas and carrots and cook until heated through, about 2-3 minutes.
  • Push the ingredients to the sides of the pan, creating a well in the center. Pour the beaten eggs into the well and scramble until cooked.
  • Add the chilled rice and stir to combine with the other ingredients.
  • Add the soy sauce, oyster sauce, salt, and pepper, and stir to combine.
  • Cook for an additional 2-3 minutes, stirring occasionally, until the rice is heated through.
