Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips

  • 2 bell peppers, sliced into thin strips

  • 1 onion, sliced into thin strips

  • 3 cloves garlic, minced

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil

  • 8-10 flour tortillas

  • Optional toppings: shredded cheese, sour cream, salsa, guacamole, chopped fresh cilantro

Directions

  • In a large bowl, whisk together garlic, chili powder, cumin, smoked paprika, salt, black pepper, and olive oil.
  • Add the chicken strips to the bowl and toss to coat with the spice mixture. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  • Heat a large skillet or griddle over medium-high heat. Add the chicken strips and cook for 5-6 minutes, stirring occasionally, until cooked through and no longer pink.
  • Add the sliced bell peppers and onions to the skillet and cook for an additional 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
