Ingredients

  • For the Cake:
  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk or plain yogurt

  • 2 cups peeled, cored, and diced apples (such as Granny Smith)

  • For the Topping (optional):
  • 1/4 cup granulated sugar

  • 1 teaspoon ground cinnamon

Directions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a 9×9-inch square pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk or yogurt. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  • Gently fold in the diced apples until evenly distributed in the batter.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • If using the optional topping, mix together the granulated sugar and cinnamon. Sprinkle this mixture evenly over the batter in the pan.
  • Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  • Once the cake is fully cooled, you can dust it with powdered sugar if desired, or serve it as is.
