1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk or plain yogurt
2 cups peeled, cored, and diced apples (such as Granny Smith)
- For the Topping (optional):
1/4 cup granulated sugar
1 teaspoon ground cinnamon

- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a 9×9-inch square pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk or yogurt. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the diced apples until evenly distributed in the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- If using the optional topping, mix together the granulated sugar and cinnamon. Sprinkle this mixture evenly over the batter in the pan.
