The pico de gallo is a typical sauce or salad of Mexican cuisine. It is one of the most classic preparations in this country, and it is found in almost all regions in a multitude of variants, consisting of tomato, onion and chili minced in brunoise. It often also includes coriander, oregano, panela cheese, avocado, cumin, and / or lime juice (called “lemon” in Mexico). The chili can be jalapeño or serrano.
Pico de gallo is not normally a dish in itself, but a dressing that is used to accompany other dishes such as tacos, muffins, salads, quesadillas, fried eggs, cakes … It can also be eaten alone with tortilla chips, or else it can be included in mixed dishes as a garnish; the most common is to use it as a sauce. Because its colors correspond to those of the flag of Mexico, it is also known as Mexican sauce or flag, and the dishes that accompany it are called “a la mexicana.”
