Pad See Ew is known for its slightly charred and smoky flavor, achieved by cooking the ingredients over high heat. It is often served with a wedge of lime and chili flakes on the side, allowing diners to adjust the flavors according to their preference.

Ingredients

  • 8 ounces wide rice noodles

  • 8 ounces protein (chicken, beef, pork, or shrimp), sliced into thin strips

  • 2 cups Chinese broccoli or regular broccoli, cut into bite-sized pieces

  • 3 cloves garlic, minced

  • 2 eggs, beaten

  • 2 tablespoons vegetable oil

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon fish sauce

  • 1 tablespoon sugar

  • 1/2 teaspoon black soy sauce (optional, for color)

  • Fresh cilantro or green onions for garnish (optional)

  • Lime wedges for serving (optional)

Directions

  • Prepare the rice noodles according to the package instructions. Drain and set aside.
  • In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, and black soy sauce (if using). Set aside.
  • Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  • Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add the protein (chicken, beef, pork, or shrimp) to the pan and stir-fry until cooked through. If using shrimp, cook until they turn pink.
  • Push the protein to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until they are almost cooked.
  • Add the Chinese broccoli or regular broccoli to the pan and stir-fry for a couple of minutes until it is slightly tender.
  • Add the cooked rice noodles to the pan, followed by the prepared sauce mixture. Toss everything together until the noodles are well-coated with the sauce and heated through. Cook for an additional 1-2 minutes.
  • Remove from heat and garnish with fresh cilantro or green onions if desired.
  • Serve Pad See Ew hot, with lime wedges on the side for squeezing over the noodles.
