Ingredients
8 ounces wide rice noodles
8 ounces protein (chicken, beef, pork, or shrimp), sliced into thin strips
2 cups Chinese broccoli or regular broccoli, cut into bite-sized pieces
3 cloves garlic, minced
2 eggs, beaten
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon fish sauce
1 tablespoon sugar
1/2 teaspoon black soy sauce (optional, for color)
Fresh cilantro or green onions for garnish (optional)
Lime wedges for serving (optional)
Directions
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, and black soy sauce (if using). Set aside.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat.
- Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the protein (chicken, beef, pork, or shrimp) to the pan and stir-fry until cooked through. If using shrimp, cook until they turn pink.
- Push the protein to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until they are almost cooked.
- Add the Chinese broccoli or regular broccoli to the pan and stir-fry for a couple of minutes until it is slightly tender.
- Add the cooked rice noodles to the pan, followed by the prepared sauce mixture. Toss everything together until the noodles are well-coated with the sauce and heated through. Cook for an additional 1-2 minutes.
- Remove from heat and garnish with fresh cilantro or green onions if desired.
- Serve Pad See Ew hot, with lime wedges on the side for squeezing over the noodles.
