Musaka or musaca 1 2 is a traditional dish from the Balkans and the Middle East made from eggplants, especially popular in Palestinian cuisine. The Greek version, which is the best known internationally, consists of layers of minced lamb, sliced aubergine, and tomato, covered in a béchamel sauce and baked.

The word is of Arabic origin and comes from saqqaʿa, ‘freeze, turn white’, 3 but it came to Western European languages through Greek.
