- FISH
1 pound of fresh cod cut into 4 ounce fillets
1 cup of all purpose flour
1 cup of cornstarch
2 cups of beer or lemon Perrier
Kosher salt and fresh cracked pepper to taste
10 to 12 cups of canola oil
- TARTAR SAUCE
1 cup of mayonnaise
1/4 cup of chopped capers
1/2 cup of small diced pickles
1 tablespoon of pickle juice
Kosher salt and fresh cracked pepper to taste
dash of Tabasco sauce
- FRIES
2 russet potatoes cut into thick batonnet slices
Kosher salt and fresh cracked pepper to taste
1/2 cup of sliced green onions
1/2 cup of shredded asiago cheese
malt vinegar for garnish

- Tartar sauce
- So go ahead and chop up some capers, some pickles, we’re going to add all of that to some mayonnaise along with a little pickle juice.
- We’re going to season it with salt and pepper, little bit of Tabasco and we’re going to set it to the side.
- Fish
- I use one half cup of corn starch, to one half cup of flour, to one cup of beer. However, if you’re celebrating lent and don’t want to use beer, a great alternative is Lemon Perrier.
- So go ahead and whisk all of those ingredients together and season very heavily with salt and pepper.
- What we want to do now is simply drench the cod into this beer batter and we’re going to put it in the fryer.
- The fish is going to cook very quickly, probably in between four and six minutes.
- As soon as it’s golden-brown and has a really nice crust formed around it and cooked throughout, we’re going to set it aside on a plate lined with a paper towel just to drain any grease.
- Fries
- You want to slice these up using a knife and we’re going to add that also to the deep fryer.
- It’s only going to take about five minutes to cook those fries.
- The same process will be to drain them on a plate lined with a paper towel.
- We’re going to finish these fries off with a little salt, pepper, sliced green onions, some shaved Asiago cheese.
- Your Fish and Chips is ready!
