Ingredients

  • 1 can (15 ounces) whole kernel corn, drained

  • 1 can (15 ounces) cream-style corn

  • 1 cup cornbread mix

  • 1/2 cup sour cream

  • 1/2 cup melted butter

  • 2 eggs

  • 1 cup shredded cheddar cheese (optional)

  • Salt and pepper to taste

Directions

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similarly sized casserole dish.
  • In a large bowl, combine the whole kernel corn, cream-style corn, cornbread mix, sour cream, melted butter, and eggs. Stir well until all the ingredients are evenly combined. If desired, you can also add shredded cheddar cheese to the mixture for an extra cheesy flavor.
  • Season the mixture with salt and pepper according to your taste. Remember to go easy on the salt if your cornbread mix or canned corn already contains salt.
  • Pour the mixture into the greased baking dish and spread it out evenly.
  • Place the dish in the preheated oven and bake for approximately 45-50 minutes, or until the casserole is set and the top is golden brown. You can test for doneness by inserting a toothpick into the center of the casserole – if it comes out clean, it’s ready.
  • Once cooked, remove the corn casserole from the oven and let it cool for a few minutes before serving. This allows the casserole to set further and makes it easier to slice.
