Ingredients
Chicken breast, 1
Salt
Pepper
AP flour for dredging
Salted butter, 30 g
Olive oil, 30 ml
Dry white wine, 45 ml
Water 30 ml
Lemon juice 10 ml
Capers, 10 g
Parsley for garnish
Pasta (or bread)
Directions
- Flatten the meat into a uniform thickness with a meat pounder;
- Season both sides generously with salt and pepper;
- Dredge the meat lightly with flour;
- In a pan, keep the flame around medium setting;
- Add olive oil 30ml;
- Cook both sides for about 4 or 5 minutes until nicely browned;
- Reserve;
- In a pan, add Capers 10g;
- Lightly crush half of the capers;
- Add Water 30ml;
- Add dry white wine 45ml;
- Add Lemon juice 10ml;
- Add salted butter 30g;
- Keep stirring and let the butter and the sauce emulsify;
- Add the chicken back into the pan and heat it throught;
- Your Chicken Piccata is ready!
