  • 2 cups all-purpose flour

Directions

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, eggs, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay. Let the batter rest for about 5 minutes.
  • Preheat a non-stick frying pan or griddle over medium heat. You can also use a lightly greased pan if desired.
  • Once the pan is hot, ladle about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, and the edges start to look set, usually about 2-3 minutes.
  • Flip the pancakes with a spatula and cook for an additional 1-2 minutes, or until the other side is golden brown.
  • Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep them warm while you cook the remaining batter. You can also keep them warm in a preheated oven set to low temperature.
