Ingredients

  • 2 cups leftover mashed potatoes

  • 1 cup leftover cooked cabbage (or any other leftover cooked vegetables)

  • 1 small onion, finely chopped

  • 2 tablespoons butter or vegetable oil

  • Salt and pepper to taste

Directions

  • In a large mixing bowl, combine the mashed potatoes, cooked cabbage (or other vegetables), and chopped onion. Mix well until everything is evenly distributed. Season with salt and pepper to taste.
  • Heat a frying pan or skillet over medium heat and add the butter or vegetable oil. Allow it to melt and coat the bottom of the pan.
  • Take a handful of the potato and vegetable mixture and shape it into a patty or cake. Place it gently into the hot pan. Repeat with the remaining mixture, forming as many patties as you desire, depending on the size you prefer.
  • Cook the bubble and squeak patties for about 5-6 minutes on each side or until they are golden brown and crispy. Flip them carefully using a spatula.
  • Once the patties are cooked through and crispy, remove them from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  • Serve the bubble and squeak hot as a side dish with a traditional English breakfast, or as a main course accompanied by grilled meat, fried eggs, or your preferred toppings.
