Ingredients
2 cups leftover mashed potatoes
1 cup leftover cooked cabbage (or any other leftover cooked vegetables)
1 small onion, finely chopped
2 tablespoons butter or vegetable oil
Salt and pepper to taste
Directions
- In a large mixing bowl, combine the mashed potatoes, cooked cabbage (or other vegetables), and chopped onion. Mix well until everything is evenly distributed. Season with salt and pepper to taste.
- Heat a frying pan or skillet over medium heat and add the butter or vegetable oil. Allow it to melt and coat the bottom of the pan.
- Take a handful of the potato and vegetable mixture and shape it into a patty or cake. Place it gently into the hot pan. Repeat with the remaining mixture, forming as many patties as you desire, depending on the size you prefer.
