Ingredients

  • 4 cups broccoli florets

  • 1 can (10.5 oz) condensed cream of mushroom soup

  • 1 cup shredded cheddar cheese

  • 1/2 cup mayonnaise

  • 2 eggs, beaten

  • 1 small onion, finely chopped

  • 1 cup breadcrumbs

  • 2 tablespoons butter, melted

  • Salt and pepper to taste

Directions

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • Steam or blanch the broccoli florets until they are tender but still firm. Drain and set aside.
  • In a large mixing bowl, combine the cream of mushroom soup, shredded cheddar cheese, mayonnaise, beaten eggs, and chopped onion. Season with salt and pepper to taste.
  • Add the cooked broccoli florets to the mixture and stir until everything is well combined.
  • Transfer the broccoli mixture to the prepared baking dish and spread it out evenly.
  • In a small bowl, mix together the breadcrumbs and melted butter until well combined. Sprinkle this mixture evenly over the top of the broccoli mixture in the baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the breadcrumbs are golden brown on top.
  • Remove from the oven and let it cool for a few minutes before serving.
