Ingredients

  • 4 boneless pork chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon paprika

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • 1/4 cup chicken broth or water

  • Optional
  • 1 tablespoon butter, cut into small pieces (for added richness)

  • Fresh parsley, chopped (for garnish)

Directions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, paprika, onion powder, garlic powder, salt, and pepper to create a marinade.
  • Pat the pork chops dry with paper towels and place them in a baking dish.
  • Rub the marinade all over the pork chops, making sure they are evenly coated. If you have time, you can cover the dish and let the pork chops marinate in the refrigerator for 30 minutes to an hour for more flavor.
  • Pour the chicken broth or water into the baking dish around the pork chops. This helps keep the pork chops moist during baking.
  • If using, place small pieces of butter on top of each pork chop for added richness.
  • Cover the baking dish with foil, creating a tent to allow some steam to escape without drying out the chops.
  • Bake the pork chops in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). If you prefer well-done chops, you can cook them a few minutes longer, but be careful not to overcook them to keep them juicy.
  • Once baked, remove the foil and let the pork chops rest for a few minutes before serving.
  • Garnish with chopped fresh parsley, if desired, and serve the baked pork chops with your favorite side dishes like roasted vegetables, mashed potatoes, or a green salad.
