  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 large egg

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract


  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate mixing bowl, beat the egg and then stir in the milk, melted butter, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined (a few lumps are okay).
  • Heat a non-stick griddle or frying pan over medium heat.
  • Use a ladle or measuring cup to pour 1/4 cup of batter onto the griddle for each pancake.
  • Cook the pancakes until small bubbles form on the surface and the edges start to look set, then flip and cook until golden brown on both sides.
  • Serve the pancakes warm with butter and maple syrup.
