Ingredients

  • Water 4 cup (960ml)

  • katsuobushi dried bonito flakes 2 cup packed (2/3 oz or 20g)

Directions

  • Bring water to boil;
  • Just before water boil add katsuobushi and bring to boil again;
  • Once boiling reduce heat and simmer for 30 seconds and turn off the heat;
  • Steep for 10 mins;
  • Strain the dashi through a fine-mesh sieve over a bowl or measuring cup;
