Ingredients

  • 6 cups chopped romaine lettuce

  • 1 large tomato, diced

  • 1 ripe avocado, peeled, pitted and diced

  • 2 boneless, skinless chicken breasts, grilled and diced

  • 4 strips of bacon, cooked and crumbled

  • 2 hard-boiled eggs, sliced

  • 1/2 cup crumbled blue cheese

  • Salt and pepper, to taste

  • Dressing
  • 3 tablespoons red wine vinegar

  • 1/4 cup olive oil

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Salt and pepper, to taste

Directions

  • In a large bowl, combine the chopped romaine lettuce, diced tomato, diced avocado, grilled chicken, crumbled bacon, sliced eggs, and crumbled blue cheese.
  • Season with salt and pepper, to taste.
  • In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
  • Just before serving, drizzle the dressing over the salad and gently toss to combine.
