Ingredients
2 medium zucchini
2 tablespoons of olive oil
Salt and pepper to taste
Directions
- Wash and peel the zucchinis, if desired.
Some people prefer to leave the skin on for a more rustic look and to get more nutrients. - Use a vegetable grater or vegetable spiralizer to turn the zucchinis into thin, spaghetti-like “noodles”.
- In a large skillet, heat the olive oil over medium heat.
- Add the zucchini zoodles to the heated skillet.
Season with salt and pepper to taste. - Cook the courgettes for about 2-3 minutes, stirring occasionally.
You want them to be slightly softened but still crunchy. - Remove the “zoodles” from the heat and serve immediately.
You can accompany them with the sauce of your choice, such as tomato sauce, pesto, garlic and olive oil sauce, or any other sauce you prefer.
