Ingredients
200g (7oz) unsalted butter, softened
200g (7oz) caster sugar
4 large eggs
200g (7oz) self-raising flour
1 teaspoon baking powder
2 tablespoons milk
Raspberry jam (or any other jam of your choice)
Whipped cream or buttercream for filling
Icing sugar for dusting (optional)
Directions
- Preheat your oven to 180°C (350°F) and grease two 20cm (8-inch) round cake tins. Line the bases with parchment paper.
- In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Sift the self-raising flour and baking powder into the bowl and gently fold them into the mixture using a spatula or wooden spoon. Be careful not to overmix.
- If the batter is too thick, add 2 tablespoons of milk and gently fold until combined and smooth.
- Divide the batter evenly between the prepared cake tins and smooth the tops with a spatula.
- Bake in the preheated oven for 20-25 minutes or until the cakes are golden brown and spring back when lightly pressed with your fingertip.
- Remove the cakes from the oven and let them cool in the tins for 5 minutes before transferring them to a wire rack to cool completely.
- Once the cakes are completely cool, spread one layer with raspberry jam (or your preferred jam) and the other layer with whipped cream or buttercream.
- Sandwich the two layers together and dust the top with icing sugar if desired.
- Serve slices of the Victoria sponge cake with tea or coffee, and enjoy!
