A veggie burger is a burger patty that does not contain meat. Instead, it is typically made from various plant-based ingredients such as vegetables, grains (like quinoa or lentils), legumes (such as beans or chickpeas), tofu, mushrooms, and/or textured vegetable protein (TVP). These ingredients are often seasoned and combined to mimic the taste, texture, and appearance of traditional meat-based burgers.

Veggie burgers are popular among vegetarians, vegans, and people looking to reduce their meat consumption for health or environmental reasons. They can be served on a bun with various toppings, condiments, and accompaniments, just like traditional burgers.

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup cooked quinoa

  • 1/2 cup finely chopped onion

  • 1/2 cup finely chopped bell pepper (any color)

  • 2 cloves garlic, minced

  • 1/2 cup breadcrumbs (you can use regular or gluten-free breadcrumbs)

  • 1 tablespoon soy sauce or tamari

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon chili powder (optional, for added spice)

  • Salt and pepper to taste

  • Olive oil for cooking

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly mashed but still have some texture.
  • Add the cooked quinoa, chopped onion, chopped bell pepper, minced garlic, breadcrumbs, soy sauce, cumin, paprika, chili powder (if using), salt, and pepper to the bowl with the mashed black beans. Mix everything together until well combined.
  • Form the mixture into burger patties. Depending on the size you prefer, you should get about 4-6 patties from this recipe.
  • Heat a bit of olive oil in a skillet over medium heat. Once the skillet is hot, place the veggie burger patties in the skillet (you may need to cook them in batches depending on the size of your skillet). Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  • If you prefer, you can also bake the veggie burger patties in the preheated oven for about 20-25 minutes, flipping them halfway through the cooking time.
  • Once the veggie burger patties are cooked, serve them on burger buns with your favorite toppings and condiments, such as lettuce, tomato, avocado, onions, pickles, ketchup, mustard, or vegan mayonnaise.
