Ingredients
7 stale French breads
200 ml of coconut milk
600ml of water
100g of dried shrimp
2 medium onions
150g ground cashews
150g shelled and unsalted roasted peanuts
Ginger (5g)
120ml palm oil to taste
Directions
- Cut 7 stale French breads into pieces;
- Add 200 ml of coconut milk;
- Add 600ml of water;
- Let it rest for 10 minutes;
- Wash and remove the head and tail of 100g of dried shrimp (reserve the shrimp);
- Add the head and tail to the blender;
- Add 1 cup of water;
- Beat well;
- Sift (we will only use the broth);
- Beat the bread in the blender (slowly);
- Transfer to the pan;
- In a blender, add 2 medium onions;
- Add 150g of ground cashew nuts;
- Add 150g of shelled and unsalted roasted peanuts;
- Add ginger (5g);
- Add 50g of dried shrimp (half);
- Add the shrimp broth;
- Beat well;
- Add the mixture to the bread pan;
- Add 120ml of palm oil to taste;
- Turn on medium heat and mix;
- Mix until it starts to unglue from the bottom of the pan;
- Your Bahia vatapá is ready!
