Indulge in this delicious tapioca pudding!


  • 3 eggs

  • 160 grams of granulated tapioca

  • 50 grams of grated coconut

  • 1 can of condensed milk

  • 1 cup (250 ml) milk

  • 1 cup of sugar (260 grams)

  • 5 tablespoons of hot water


  • Blend half of the tapioca in a blender until it becomes bran and mix with the other half of the tapioca in a bowl. 
    Add the grated coconut, milk and mix well. 
    Cover and let the tapioca hydrate for 20 minutes.
  • Add the sugar in a wide-bottomed pan and melt over low heat until it forms a syrup. 
    Add the hot water, stir well and turn off the heat. 
    Pour the caramelized syrup over the bottom and sides of a roasting pan.
  • Place the eggs, condensed milk and the hydrated tapioca mixture in a container. 
    Stir well and transfer the mixture to the caramelized form. 
    Cover completely with aluminum foil, place inside a larger roast with water and bake in a bain-marie at 200º₢ for about 50 minutes.
  • Remove the foil and bake the pudding for another 10 minutes. 
    Then wait for the pudding to cool to room temperature. 
    Transfer the dessert to the fridge and leave for a few hours. 
    Unmold on a plate or platter and serve the cold tapioca pudding.
