Ingredients
- Dough
100 grams of grated coconut
1 cup granulated tapioca
1 box of condensed milk
1 bottle of coconut milk
2 cups of milk (tea)
3 whole eggs

1 cup hot water (tea)
2 cups of sugar (tea)
Directions
- Place the granulated tapioca, milk, coconut milk in a container and mix well.
Add the grated coconut, mix and set aside for 30 minutes. - For the syrup add the sugar in a pan and stir over medium heat until it melts and turns into a caramel.
Add hot water, mix and boil for 2 to 3 minutes.
Pour into a mold and reserve. - In the blender add the eggs, hydrated tapioca, condensed milk and beat well.
Then transfer the mixture to the form with the caramelized syrup.
Fully cover the tin with aluminum foil, shiny side down. - Place the mold in a larger baking dish with water and bake the pudding in a bain-marie for about an hour and a half in a preheated oven at 180º₢.
Wait for the dessert to cool at room temperature or refrigerate.
Unmold the tapioca pudding with coconut, melt the syrup and pour over the top and the dessert is ready to serve.
