Ingredients
450g ground beef (we use ground duckling)
3 italian zucchinis
1 tablespoon of olive oil
1 chopped onion
3 minced garlic cloves
1 can of diced peeled tomato
1 tablespoon of tomato paste
salt to taste
black pepper to taste
100g grated mozzarella cheese
50g grated parmesan cheese
Directions
- Filling
- In a high skillet, add 1 tsp of olive oil;
- Add 450g of ground beef (we use ground duckling type);
- Add salt and pepper to taste;
- Let it cook for 2 minutes;
- Add chopped onion;
- Saute for 2 minutes;
- Add minced garlic;
- Saute for 1 minute;
- Add 1 can of diced peeled tomato;
- Add 1 tablespoon of tomato paste;
- Mix and let it cook;
- Cut the zucchinis in half;
- Remove the core of the zucchini with a spoon;
- Transfer the zucchinis to a platter;
- Add 1 tsp of olive oil and a pinch of salt;
- Add the ground beef filling;
- Add grated mozzarella;
- Add grated parmesan;
- Bake in a preheated oven at 220 degrees for 15 to 20 minutes;
- Your stuffed zucchini is ready!
