Quibebe is not only tasty but also very easy to prepare!

Ingredients

  • 850 grams of pumpkin

  • Coconut water for cooking

  • 1 tablespoon butter or margarine

  • 1 onion

  • 2 garlic cloves

  • parsley to taste

  • salt to taste

Directions

  • Chop the onion, garlic cloves and brown in a pan with the butter, stirring constantly. 
    Add the pumpkin, peeled and cut into cubes, then add coconut water until almost covered and salt to taste.
  • Cover the pan and let the pumpkin cook until it is soft and the coconut water is dry (add more water during the process if you need to cook more). 
    Mash the pumpkin with a fork until pureed. 
    Add the chopped parsley to taste, mix well and the kibbeh is ready to serve.
