Ingredients
2 pounds beef stew meat, cut into bite-sized pieces
1/4 cup all-purpose flour
Salt and pepper to taste
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
4 cups beef broth
1 cup red wine (optional)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
4 carrots, sliced
4 potatoes, diced
2 cups frozen peas (optional)
Directions
- In a bowl, combine the flour, salt, and pepper. Toss the beef stew meat in the flour mixture until evenly coated.
- Heat the vegetable oil in a large skillet over medium-high heat. Brown the coated beef in batches until it develops a nice crust. Transfer the browned meat to the slow cooker.
- In the same skillet, sauté the chopped onion and minced garlic until softened. Add this mixture to the slow cooker.
- Pour the beef broth, red wine (if using), and Worcestershire sauce into the slow cooker. Add the dried thyme and rosemary, stirring to combine.
- Add the sliced carrots, diced potatoes, and any other desired vegetables to the slow cooker.
- Cover the slow cooker and cook on low for 7-8 hours or until the meat is tender and the vegetables are cooked through.
- If using frozen peas, add them during the last 30 minutes of cooking.
- Taste and adjust the seasoning if needed before serving.
