The slow-cooking process allows the ingredients to simmer and meld together, resulting in a tender and savory stew. Here’s a basic recipe for slow cooker beef stew:

Ingredients

  • 2 pounds beef stew meat, cut into bite-sized pieces

  • 1/4 cup all-purpose flour

  • Salt and pepper to taste

  • 2 tablespoons vegetable oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 4 carrots, sliced

  • 4 potatoes, diced

  • 2 cups frozen peas (optional)

Directions

  • In a bowl, combine the flour, salt, and pepper. Toss the beef stew meat in the flour mixture until evenly coated.
  • Heat the vegetable oil in a large skillet over medium-high heat. Brown the coated beef in batches until it develops a nice crust. Transfer the browned meat to the slow cooker.
  • In the same skillet, sauté the chopped onion and minced garlic until softened. Add this mixture to the slow cooker.
  • Pour the beef broth, red wine (if using), and Worcestershire sauce into the slow cooker. Add the dried thyme and rosemary, stirring to combine.
  • Add the sliced carrots, diced potatoes, and any other desired vegetables to the slow cooker.
  • Cover the slow cooker and cook on low for 7-8 hours or until the meat is tender and the vegetables are cooked through.
  • If using frozen peas, add them during the last 30 minutes of cooking.
  • Taste and adjust the seasoning if needed before serving.
