Unlike traditional ice cream, semifreddo is not churned during freezing, which gives it a smoother and creamier texture.

The base of semifreddo typically includes egg yolks, sugar, and cream. Sometimes, additional flavorings such as fruit purees, chocolate, nuts, or coffee are added to enhance the taste. The mixture is usually lightened with whipped cream or egg whites to give it a delicate and airy texture.

Semifreddo is often set in a mold and then frozen until it reaches a semi-solid state. It is served chilled rather than fully frozen, allowing it to be easily sliced and served. This dessert is popular in Italy and can be found in various flavors and variations, making it a versatile and delicious treat.

Ingredients

  • 4 large egg yolks

  • 1/2 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1 1/2 cups heavy cream

  • Pinch of salt

Directions

  • Line a loaf pan or another mold of your choice with plastic wrap, leaving some overhang to easily lift the semifreddo out later.
  • In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the sugar is dissolved, and the mixture is slightly thickened. This creates a sabayon.
  • Remove the bowl from the heat and stir in the vanilla extract. Let the mixture cool to room temperature.
  • In a separate bowl, whip the heavy cream with a pinch of salt until stiff peaks form.
  • Gently fold the whipped cream into the egg yolk mixture until well combined. Be careful not to deflate the whipped cream; you want to keep the mixture light and airy.
  • Pour the semifreddo mixture into the prepared pan, smoothing the top with a spatula.
  • Cover the pan with plastic wrap and freeze for at least 4-6 hours or overnight until firm.
  • When ready to serve, remove the semifreddo from the freezer, lift it out of the pan using the overhanging plastic wrap, and place it on a serving dish. Slice and serve immediately.
  • You can garnish with fresh berries, chocolate sauce, or a dusting of cocoa powder before serving.
