Roast pork can be prepared using different cuts of pork, such as loin, shoulder, belly, or leg, each offering its own unique flavor and texture when cooked.


  • 4-5 pounds pork loin, shoulder, or belly (boneless or bone-in)

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 2 tablespoons fresh herbs (rosemary, thyme, or sage), chopped

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika (optional)

  • 1 onion, sliced (optional)

  • 1 cup chicken or vegetable broth (optional)


  • Preheat your oven to 350°F (175°C).
  • In a small bowl, mix together the minced garlic, olive oil, chopped herbs, salt, pepper, and paprika (if using) to create a paste.
  • Place the pork roast in a roasting pan or a baking dish. If you’re using an onion, scatter the sliced onion on the bottom of the pan to create a bed for the pork.
  • Rub the garlic and herb paste all over the surface of the pork roast, making sure to coat it evenly.
  • If desired, pour the chicken or vegetable broth into the bottom of the roasting pan to help keep the pork moist during cooking.
  • Place the roasting pan in the preheated oven and roast the pork until it reaches an internal temperature of 145°F (63°C) for medium doneness, or until desired doneness is reached. This typically takes about 20 minutes per pound, but cooking times may vary depending on the size and cut of the pork.
  • Once the pork is done cooking, remove it from the oven and let it rest for about 10-15 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a juicy and flavorful roast.
  • Slice the roast pork and serve it hot with your favorite side dishes, such as roasted vegetables, mashed potatoes, or salad.
