Ingredients
1 cup of rice (cooked)
1 bunch of parsley (approx. 50 grams)
1 bunch of broccoli (approx. 350 grams)
1 tablespoon bicarbonate of soda
1 tablespoon butter
1 tablespoon olive oil
1/2 chicken stock cube dissolved in 1/4 cup of water
Salt to taste
Directions
- Fill a pot halfway with water and place over medium heat.
Add the baking soda and broccoli bouquets, mix well and cook until the vegetable is soft. - Remove the broccoli from the water and place in a food processor.
Beat well to shred, transfer to a container and book.
Blend the parsley with the olive oil and the chicken broth dissolved in the processor until it forms a pesto-like sauce. - Add the cooked broccoli and parsley sauce to a pan with butter and sauté for a few minutes stirring constantly.
- Add the cooked rice to the mixture in the pan, stir gently to homogenize and the rice with broccoli is ready to serve with the side dish of your choice.
