Ingredients
500g pumpkin
1 medium potato
1 medium onion
1 small celery stalk
1 small carrot
3-4 fresh sage leaves
2 garlic cloves
1 tsp salt
1/2 tsp nutmeg
A pinchof white pepper
100 ml of oat cream or coconut milk
Directions
- Clean and chop the onion;
- Clean and chop the carrot;
- Chop the celery stalk;
- Peel and cut the potato;
- Crush and peel the garlic cloves;
- Cut the pumpkin in half and clean it from the seeds and skin;
- Cut the pumpkin into cubes;
- In a pan, add 3 tbsp of olive oil;
- Add the garlic clove;
- Add the fresh sage leaves;
- Add onion;
- Add the carrot;
- Add the celery;
- Add the pumpkin;
- Add 1 tsp of salt;
- Add 1/2 tsp of nutmeg;
- Add a pinch of white pepper;
- Stir;
- Add the potato;
- Add 300ml of water or vegetable broth;
- Cover and let it simmer for 20 minutes over medium flame;
- Use a hand blender to make it creamy;
- Add the oat cream or coconut milk;
- Mix;
- Your Pumpkin Soup is ready!
