- Wash and peel the potatoes if desired. You can leave the skin on for a rustic texture.
- Use a sharp knife or a mandoline slicer to cut the potatoes into thin, uniform slices. Thinner slices will result in crispier chips.
- If you have time, you can soak the potato slices in a bowl of cold water for about 30 minutes. This helps remove some of the starch, resulting in crispier chips. Dry the slices thoroughly with a paper towel before frying.
- In a deep fryer or a large, deep pan, heat vegetable oil to around 350-375°F (175-190°C). Use enough oil to fully submerge the potato slices.
- Carefully add a small batch of potato slices to the hot oil, making sure not to overcrowd the pan. Fry until the chips are golden brown and crispy. This usually takes 2-4 minutes, depending on the thickness of the slices.
- Use a slotted spoon or tongs to remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil.
